potentiostat

( im not sure where to put this)
Ive been researching about potentiostats, and I cant seem to grasp the purpose of it when you have a voltage supply. Why cant you use a voltage supply to plate and etch. I realize potentiostats have 3 electrodes, but why was the counter(auxillary) electrode introduced?
