There's no need to convert anything to feet before you have the length of the elevator in steps.

I assume the escalators are the same length and move with the same speed.

You should be able to work out how long it took bob to walk up and down the escalators.
after that it's just v = d/t.

E+B = L/T

L = length of escalator
E = speed of escalator in steps/sec
B = speed of bob in steps/sec.
T = time to ascend/descend the escalator

this will give you 2 equations with L and E as unknowns.

Got it thanks! I had set the distances equal because I figured they would be as long as I included the rate of the escalator in the equation.
