To calculate the speed of heat projection we use the next formula:
dQ/dt=A[alpha](T-To)
what is does the [alpha] represents and what is the [alpha] of water?

The equation you wrote describes a type of heat transfer. Alpha is a heat transfer coefficient, and A is the area of contact. Alpha isn't really a material property; although it may depend on some material properties as well as numerous other variables at the interface where heat is being transfered.
