Just for some observation, is there any good "maps" of the universe? like nothing detailed but shows the hemispheres.

Also is there any website which show totals of matter in the universe, and how it changes when you go to different parts of the universe?

Do a google image search for SDSS (Sloan Digital Sky Survey). For example, here is the distribution of galaxies in (parts) of the northern and southern celestial hemispheres: http://www.sdss3.org/press/images/20...angespider.jpg

You may find this application useful:
http://www.amnh.org/our-research/hay...gital-universe

As it says on the tin, it's a free planetarium software released by Hayden Planetarium. It's a powerful visualisation tool, if with a bit user-unfriendly interface.

You'll want to run the "extragalactic" batch file.

It can show data from a number of surveys and calalogues, including Abell, 2MASS, Sloan, WMAP and others. You'll find the complete list in the user manual under Extragalactic Atlass->Data Groups section, together with brief description of what they are, as well as reference links.
