Nutrient antagonisms

Plant nutrient antagonisms are well known, and easy to find in the literature. I'm trying to find a list/source/book - whatever - for human nutrition and a similar concept.

Other than a few references to avidin/biotin and beta-sitosterol/animal sterols and few other things that sell in the heath food stores - I found nothing.

Is there a sort of compendium of this kind of literature - two dated Human Nutrition
books I have mention nothing in this area. Any starting point welcomed.
