Use of Accelerometer data to measure deflection on movable surfaces


I would like to measure the deflection of a horizontal plane from at rest to full deflection with an approximately 50 pound weight. Is this possible, at a reasonable cost? What kind of accuracy am I looking at? Any and all assistance would be greatly appreciated. My only experience is with US Navy's submarine inertial guidance.
