What does it mean when people say that he's more of a left side of the brain type of character, or she's more of a right side character?

Well, according to popular thought, left brained people are more analytical, and right brained people are more intuitive. It was based on some research back in the sixties, and I don't know how valid it is, but it's pretty well fixed in the public mind.

Another note:
Your left hemisphere controls your right side of your body and vice versa. If you're by chance a leftie you're using your right brain and hence activating it over your left brain.
