What is a typical carrier frequency for amplitude modulation? In particular, for amplitude modulation in spectroscopy.

It can be any frequency you want, AM is used from tens of Hz up to optical frequencies.
Likewise, spectroscopy is done using EM radiaton from the whole spectrum: from radio waves up to gamma radiation.
