why would a flame contain electrons and ions??

Combustion is a breaking of bonds and a re-arranging of atoms and moleules into lower energy bond states.

Ions and electrons are intermediate steps in that process.

The high temperature of the flame will partially ionize a small percentage of the molecules, giving you free electrons and ions.
