Plasma is simply a state of matter. Any element can be ionized to form a plasma.

Isn't lightning plasma? And I'm sure it says that energy swords and light sabers are also plasma.

Lightning is plasma, but energy swords and light sabers are whatever the fiction author wants them to be.
