Is there some way I can calculate the voltage over a small distance? I have a grill igniter that I need to find the voltage of for a project. Any help would be appriciated.

Buy a volt meter.

An igniter produces a spark in air, I believe. All you need to do is look up the breakdown voltage of air, and that's roughly the voltage that's generated.
