Depends on your budget and what you'll be using them for.
MatLab, by Mathworks (available from mathworks.com) is very very versatile, but you have to know what you're doing.
Maple, by Maplesoft, is pretty good. It does symbol manipulation and solves differential equations.
I've heard good things about MatCad, but never used it.
Mathematica is very versatile, I'm told, but I've never used it. A student license sells for $130.
If you just need to display simple graphs, graphmatica is great - and free! (just google graphmatica.)
