I notice that the branch cuts for arcsin(z) are from -infinity to -1 and 1 to infinity. How do these choices for the branch cuts make the function single-valued? I am having trouble understanding the reasoning here even though these choices for the cuts are widely used/accepted.

If you have the time and a real interest in the material, yes. Forgetting material is also an indication that it was not learned well in the first place. Usually when I learn something well, it becomes second nature.

My main concern is that an admissions committee would disapprove if I took upper-level courses and never finished the calculus sequence, even though I can do well in the upper-level math courses like ODE.
