I'm in a similar boat. Year 12 at the moment, trying to decide whether to do a 3 year chemistry course, 4 year chemE course or 5 year double degree.

AFAIK pure anhydrous copper sulphate is just a white powder. It's only when you add water that it takes its blue colour. Not sure what bearing that has on the atomic reasons for this.
I'm not quite sure i follow... I'm not doing chemical engineering at the moment because I'm in year 12. I want to do chemical engineering because I've always had an interest and ability in chemistry, and I'm pretty good at maths.

So the University of Queensland offers an optional first year general engineering program; at which point you choose a specialization. Alternatively, I think I can just jump straight into Chemical Engineering, which I'm pretty sure is the one i want. I can't know for sure until i get some...
If HCl is strong enough, i believe it can corrode/eat through your skin. Not sure if 18 mol is enough to cause that but i would certainly never ever try it.
