How is the job outlook for Network Engineering or Network Administration? What kinds of Maths and Sciences would you recommend to add to my studies?
Not as good as it was in the 90s. You need to have some experience to get a job as a network admin. The best way to do this is to volunteer at nonprofit organizations or to just volunteer in general. You can even try to volunteer at a company. That would probably be the best route. Volunteer at a company you would like to work for and your chances of getting a job there when you graduate are good. You will have to do some convincing to get in the door but once you're in then your chances are pretty good.

Yeah I plan on doing volunteer work, as well as co-op. Hopefully I can get an on campus job too. I'm pretty devoted and have always been interested in Linux, Unix and scripting.
