Will our universe be a quantum vacuum...just one big vacuum with particles so spread apart that its very near to a pure vacuum-like state

That is the way it currently looks. Our universe will eventually suffer heat death. Matter and energy will eventually be diffused by expansion into virtual emptiness. This will take a very long time [>10E100 years], but, all bets are off after that.
