Does anyone know of any good freeware software out there that works well to rip MP3's from a CD? If not a point to another, more MP3 related, fourms might be good too.

iTunes.
just go into the import settings and change it from aac to mp3 and pick your quality from 64 kbps to 320 kbps

I recommend CDex, as it supports arbitrary codecs in addition to mp3.

iTunes does the job very nicely.
