The Pluot

The pluot,a cross of a plum with an apricot, has been around a few years, but I am sure it wasn't around 50 years ago.
Can any fruit be crossed to make a new fruit: can you cross a kiwi with a banana,or an apple with a peach?

No. Plums can be crossed with apricots because they're all members of the Prunus genus same as peaches, cherries and almonds.
