Engineering Qualifications

Hi,
I'm currently a Project Manager for an international Prototyping company looking to broaden my engineering knowledge, but I am confused as to which route to take. I am currently looking at a foundation degree in Engineering, but how will this kind of qualification stand with potential employers, will they even look at a foundation degree???
Can anyone recomend anything for me??

I have a degree in general engineering science, with a major in mechanical. I've been continuously employed for 35 years at many different jobs.
