Im reading about Coulombs law in my textbook.

It states that:

"The forces between to charged particles are proportional with the charges Q1 and Q2, and inversely proportional with the square of the distance r between them.

F=kQ1Q2/r2

The forces acts along the straight line between the particles"

Is this a straight line in space-time or just space?

Just space. You've been given a geometric description - r is geometric distance.
