Do they perform double replacement to form an insoluble precipitate?
Will this reaction take place?
How would I know?

My first guess is, No Reaction. Many salts of those ions are soluble. Check any listed Ksp values for the various ionic compounds to make a better decision (potassium acetate, potassium phosphate, and know already acetic and phosphoric acids are soluble).

In general, potassium compounds are soluble in water, as are acetates. I wouldn't expect any precipitate to form.
Now, if you used calcium acetate instead of acetic acid, that would be a different story...
