SUMMARY

The leaves of the elderberry tree (Sambucus nigra) effectively color oils and fats green and serve as a natural mosquito repellent. The edible berries contain anthocyanins, which act as a pH indicator, turning red in acidic conditions and blue in basic environments. This discussion confirms the practical applications of elderberry leaves and berries in both culinary and pest-repellent contexts.

PREREQUISITES
  • Understanding of plant compounds, specifically anthocyanins
  • Knowledge of natural dyeing techniques
  • Familiarity with essential oils and their uses
  • Basic principles of pH indicators
NEXT STEPS
  • Research the extraction methods for anthocyanins from elderberries
  • Explore natural dyeing techniques using plant materials
  • Investigate the effectiveness of various natural mosquito repellents
  • Learn about the chemical properties of pH indicators
USEFUL FOR

Botanists, herbalists, natural product formulators, and anyone interested in sustainable pest control and natural dyeing methods.

I found that the leaves of the elderberry tree (Sambucus nigra) can be used to add a green coloring to oils and fats, among other things, is this claim true?
http://www.pfaf.org/database/plants.php?Sambucus+nigra"
Also what compound in the edible berries makes it a good pH indicator (red=acid blue=base)? The leaves make good mosquito repellent (tried it, it works, and good).

Probably anthocyanin(s). Here is some more info.
