I was wondering what kind of engineers do the actual assembly of the space rocket engines and other non-electrical devices in the aerospace industry, mechanical engineers right?

I doubt the engineers do any assembling, I would guess it's the Mechanics.

Also, the engine is not a non-electrical device at all, it is, like most things are becoming "electro-mechanical".
