Do you mean all real numbers except for the naturals? I suppose you'd denote it by ##\mathbb{R} \setminus \mathbb{N}##.

There's really no notion of "all numbers" in mathematics, since "number" is mostly a colloquialism used to describe all kinds of unrelated things.
