Why do manufacturers carbonate soft drinks?

Because they taste good. People enjoy the fizzy CO2.

I guess, it is about thirty_ness, I like it when it run up to my nose.
 
Supposedly in 1767 Dr. Joseph Priestley made carbonated water by pouring water back and forth over a vat that emitted carbon dioxide as exhaust. It became some kind of hit with snooty rich Europeans and the modern soft drink industry was born.
