Why do watermelons get sweeter after being in refrigerator 24 hrs.

Our outside temperature is 98°f. Laser thermometer shows melons in full sun in my garden are 132°f. Cut melon and taste it then put melon in refrigerator for overnight next day melons are very noticeable sweeter.

Explain that?

HOSS sells seeds they claim water melons get sweeter after being in refrigerator 24 hours and its true.

I have not tried this on grocery store watermelons yet but it should work.

What has your own research told you? A quick Google reveals some plausible explanations.
 
Human taste sense involves some complexity. Not only watermelons and sweetness but the taste of many liquids and fruits varies with temperature.

Simple experiment: sample a cola or flavored seltzer at room temperature versus the same beverage chilled in a refrigerator or ice bucket.

Related note: watermelons, a popular American picnic item, are commonly chilled in nearby fresh water lakes and streams when refrigeration not available.
