I've been searching for the answer for this for ages. I only find answer relating to types of TYPES of cable installation to use or TYPES of installation methods to use depending on external factors. I can't find anything that talks about cable sizing and what factors influence it, can someone help me out?

It depends on what kind of cables you are talking about, but in the end it comes down to safe maximum temperatures.

If you are asking about sizing AC Mains cables in home or industrial installations, there are regulations and codes that cover wire type and gauge. The National Electric Code (NEC) applies in the USA, for example.
