Final Year EE Courses: Impact on Job Market

Hi, I am entering my final year of school here in Western New york. I will be graduating with an EE degree. I am curious as to what role the courses you take your final year play in what field of study you get into afterwards. I plan on taking a MEMS class, lasers and optoelectronics, and maybe a RF course. My fear is I take these courses and then decide will looking for employment to look in a different branch of the EE field.
In short, do the classes you take while in your final year of school effect you in the job market?
