Physics and chemistry of the glowing pickle experiment

i have to do a physics expo project for school and i chose to do the pickle experiment where you plue a pickle into an outlet from a cut extension cord. i was wonder where i could find more information on the physics and chemistry aspects behind this experiment. thanks for the help
