Explain why eating a cooked tuber gives lots of calories whereas a bowl of spinach gives almost none even though they contain polymers of glucose but still spinach is used in diet! Explain why?Spinach is healthy?

Different polymers of glucose have very different properties. You should look into the differences between starch and cellulose.
