I am a Mechanical Engineering student...can a minor in applied math help later on my career?

I would recommend doing it if and only if almost all the classes needed for the minor are already required/recommended for your major.

If you plan to go onto get a masters then it won't matter about your undergraduate minor to prospective employers. The minor might help you gain entry to a better graduate school. If you are not doing a graduate program, then I recommend the minor since it will then be a significant part of your total education.

Overall I recommend it, but don't force yourself to do it since burning out would not be worth it.

The minor probably won't, the math skills you acquire quite possibly will.
