What does it mean to have a double honours in mathematics? I'm going to the University of Manitoba next year and that's one direction of study, but what does it mean to have a double honour? And please don't just say A LOT of math :p.

College & Departmental, maybe. What it takes to do will vary between institutions and even departments, so you'll need to check with them mostly.
