There's a wide variety of things that can be considered an "AI" computer. In many cases, the AI computer will be a conventional computer with AI applications.

But a computer dedicated to a specific AI application will probably have specialized engines design to handle problems specific to that application.
So, for example, an AI system intended to drive cars autonomously will probably include radar processors with systems that in turn include FFT engines. It will also include processors for overall navigation and planning and for operating the car. For the FFT Engine, there will be no operating system - it will be managed by a conventional processor. In the other cases, there are a selection of operating systems that can be optimized by the manufacturer to provide exactly the services requires without the overhead of supporting features such as Internet Browsing.
