Is it easily possible to change to optical engineering for the MSc and being involved in big telescope constructions after getting a BSc degree in mechanical engineering?

Depends on what you mean by 'easily'. There is considerable involvement of mechanical engineering in the design and construction of large telescopes (https://www.amazon.com/dp/3540689044/?tag=pfamazon01-20) , it's just that there aren't many projects to get involved on.
