I was wondering how kinetic energy is converted into electrical energy?(like the turbines in powerplants)

Usually (for example in the case of the turbines you mention) a dynamo is used to convert the energy. Kinetic energy is used to rotate the turbine which in turn rotates a magnet through a series of conducting coils. The changing magnetic flux causes a current (and a voltage) to build up in the coils <-- electrical energy.
