TL;DR
If I log into an account like Google from a Raspberry Pi, is it in any way less (or more) secure than logging in from a Windows desktop/laptop?
Should one avoid logging into important accounts like Google / Gmail / e-commerce from a Raspberry Pi -- or is it just as safe as logging in from a regular PC?

Or, is it actually safer, considering that it is Linux?

There is no fundamental difference. The way others might get access to your computer can vary but that depends on your specific setup.
