One book for the beginners is Matlab An Introduction with Applications by Amos Gilat.

One lecture course on Matlab basics is Matlab Programming for Numerical Computation. Check that out too.

there's also freemat, a MATLAB clone that's free and has the core Matlab functionality ie without the toolboxes. There are some online extensive pdf tutorials on it too.
