How about designing a RS-485 transceiver IC? Or an audio amp IC? Or a TV CRT horizontal and vertical drive waveform generator IC?

Look through websites like Maxim and Linear Technology to get ideas for analog IC projects...
 
How about a ciruit for instrument linearization?
It could take in three voltages for cal constants along with an input voltage and produce:
Vout = ax^2 + bx + c,
where x is the input
a, b, and c are constants between 0 and some reference voltage
