can we make a Nuetron by bombarding a proton with electrons or just have one electron hit it? And maybe shoot Antineutrino's at it

Yes, you can ( one is enough ). And you even don't have to shoot an antineutrino in it ( which would be really hard to do ), you just let neutrino fly out with neutron. There is even radioactive decay when proton in core of an atom captures electron from the K shell, releasing neutrino and transforming into neutron. Sign of such capture is X radiation from electron filling void in K shell.
