Ok, here is the scenario, kinda weird but please entertain me. Say I had a huge amount of microwave radiation being shot in a particular direction. Let's say they have a wavelength of 1mm. How would i go about polarizing the microwave radiation?

Your question is very unspecific and my magic crystal ball is unfortunately in repair. So give us more details about the setup, the microwave source, etc.

very simple ... by using an antenna that produces the polarisation that your require

Google is your friend. Do a Google Images search on Microwave Polarizer. Oh, and remember that a large portion of that "huge amount" of microwaves will be reflected back at you by the polarizer (depending on how you build it). Be sure to wear your tin undershorts when using your system... o0)
