I'm not incredibly well versed in the engineering job market but my uncle got his bachelor's in engineering from University of California San Diego and was able to get a job several years later after he completed some civil engineering tests. I think you'd be okay just minoring in EE and then majoring in Physics, but it'd be more practical for you to simply major in EE and minor physics, wouldn't it?
