That is a big topic. You could start with a good book on aerodynamics and a good book on wing theory. The books "Fundamentals of Aerodynamics" by Anderson and "Theory of Wing Sections" by Abbott and Doenhoff are as good a place to start as any. Those books will not cover recent advances in wind tunnels or computational fluid dynamics (CFD), but there will be time to look into those topics while you learn the basics. For getting an overview of a subject, I like the series of books "For Dummies" and the "Complete Idiot's Guide", but I don't think they have anything on this subject.
