Statistical physics is often used implicitly in other, more specialized research (e.g. polymer physics). Not sure to what extent I can give good advice, but since you did not get any replies yet I can at least throw in two suggestions: Have a look at the soft matter theory groups in Göttingen and Mainz, as well as the local Max Planck institutes for "Dynamics and Self-Organization" and "Polymer Science", respectively.
