If you could just program in one language for the rest of your life...which one would it be?

Python for me. It can do just about anything and the community of users continues to advance it. It is also free and simple.

probably C++, but diversity is always good, there are things such as image manipulation that other languages like Java are just better for.
 
I'm a JAVA fan myself...
 
This week, I saw a documentary done by the French called Les sacrifiés de l'IA, which was presented by a Canadian show Enquête. If you understand French I recommend it. Very eye-opening.
