What is the Science Behind Cooking and Butchery?

Thank you to everyone who has helped build this community! For those who care to know a little bit about me, I'm a chef and butcher at one of the top restaurant companies in Baltimore. I have some education in physics and chemistry, but after my first year of undergraduate studies, I chose my current career path. If you're wondering about my avatar, that is me breathing fire. I am truly humbled by the information I have gathered here already, and hopefully I can contribute something now that I'm a member.
