Are you asking that the "output" of IR detectors is "volts"? Volts is simply a measuring unit of electric potential.

The output of detectors will likely be an electric current, yes. Which would be measured in volts and amps, yes.

Each individual detector model will have specs that tell you its output values. They might be on the order of electronics devices, say < 5v and < .5mA.
