Oil produce many colors when it kept upon water and exposed to light.What is the phenomena?

In our place people use to apply vegetable oil for head,( and to body at times) and have a bath after half an hour or so. They say it keeps them cool. A kind of effect induced by mint shampoo. I don't understand how it works. But would love to know it.
