Dehydrated foods, such as Tang, are sent into space primarily to save weight during launch. The water needed for rehydration comes from recycled sources, including urine, sweat, and moisture from the crew's environment. This recycling process allows for efficient use of water, as the amount required for rehydrating dehydrated food is significantly less than the weight of liquid food that would otherwise be transported. While astronauts do have access to a variety of food options, including some that are not dehydrated, the use of dehydrated items helps optimize storage and prolong shelf life. The water produced by the Shuttle's fuel cells also contributes to the overall water supply for drinking and food preparation. The approach to food in space has been carefully analyzed to balance weight savings with nutritional needs.
