Can anyone (or everyone) describe to me what electronical engineer can do?
That is one of my options for specialization and I want to know more about it.

Have you checked your institution's documentation and/or syllabus for the specialization?
 
I did. Couple of sentences about microprocessors, software, computer hardware and that's it.
Is that everything I have to know about electronics?

That's not enough coursework for an Electrical Engineering degree. Is it for Electronics Technician? How many years long is the program?

Hello, I graduated from undergrad a few years ago with a Major in Physics and minor in Electrical Engineering.
