Basically would just like a summary of the components that are required in order to create a small dynamo.

And also, any ideas how much voltage can be produced from one? Any help would be greatly appreciated.

Your question is too broad. The voltage and current depends on how the dynamo is built, how fast it rotates, the strength of the magnets, ETC. Look up Dynamo on wikipedia and try some google searches for "Dynamo", "Generator", "How to build a generator", and other things and you should be able to find out all the info you need.
